材料:洋葱碎20公克、文蛤6颗、淡菜2颗、虾仁30公克、透抽圈20公克、鲍鱼菇片20公克、面条200公克(已煮好)。
调味料:橄榄油30c.c.、白酒30c.c.、四季豆段20公克、圣女番茄切半约6颗、高汤50c.c.、番茄酱汁150c.c.、盐与胡椒适量。
做法:
1.将洋葱、鲍鱼菇片与海鲜材料用橄榄油爆香。
2.加入四季豆拌炒均匀后加入白酒。
3.加入高汤及文蛤煮开后,加入番茄酱汁再加入面条拌匀略成稠状,再加入小番茄拌匀调味即可。

〔做法〕1.将鲍鱼两面剞上斜直刀,由中间切开;2.葱姜洗净,葱切条,姜一半切末,另一半切片;3.将鲍鱼摆盘中,加料酒、味精、汤100毫升、葱条、姜片、花椒和盐,上屉蒸;4.蒸10分钟左右取出,拣出葱、姜、花椒;5.碗内加入醋、酱油、姜末、香油兑成姜汁;6.食时,将姜汁与鲍鱼一起上桌,蘸姜汁吃
红烧鲍鱼
红烧鲍鱼方法1:
〔材料〕干紫鲍、老母鸡、净火腿、干贝、烤鱼翅汤、干贝汤、白糖、精盐、酱油、料酒、淀粉、鸡油等。
〔做法〕将干紫鲍用水发制好,加入鸡肉,火腿,干贝,上火焖3小时后,将鲍鱼取出,原汤过罗备用;将鲍鱼剞上花刀,再斜切成半厘米厚的片;将100克焖鲍鱼的原汤和kao鱼翅的汤,干贝汤一起放进双耳锅,煮沸后放入鲍鱼片,滚煮10分钟,加入白糖、精盐、酱油、料酒等调料,以淀粉调成浓汁,出锅前加少许鸡油。
方法2:
〔材料〕活鲍鱼;老鸡、老鸭、脊骨、火腿、葱、姜;调料:鲍鱼酱、上汤、鸡汁、鸡粉、生油、盐、鸡油、湿淀粉。
〔做法〕将活鲍鱼宰杀去内脏,留肉用牙刷刷干净、清净,取沙锅底部垫鸡、鸭骨块加汤,上面将处理干净的鲍鱼摆上以水没过鲍鱼为准,中火烧开,小火煨8-9小时即可,将煨透入味的鲍鱼装盘;另起锅加上汤、加调味品,调准口味及色泽,用生粉勾芡加明油浇在煲好的鲍鱼上即成。
方法3:
〔材料〕鲍鱼4只(重约750克),西兰花适量。上汤、精盐、味精、酱油、香油、米酒、湿淀粉各适量。
〔做法〕锅置火上,倒入上汤,加精盐、酱油、米酒,下鲍鱼烧入味,再用湿淀粉勾薄芡,待收汁时加味精、香油和匀起锅,装盘,西兰花点缀于盘边即可。
清汤鲍鱼〔材料〕罐头鲍鱼250克,熟火腿15克,筒鲜蘑15克,豌豆苗15克,盐10克,料酒15克,味精3克,鸡清汤800克,
〔做法〕(1)将鲍鱼用刀切成斜片。鲜蘑切薄片。熟火腿切成小象眼片。豌豆苗留嫩叶、去根、洗净。(2)将鸡清汤300克倒入炒勺用旺火烧开,将熟火腿片、鲜蘑片、鲍鱼片和豌豆苗下勺煮透捞出,倒入10个汤碗中,勺中汤如不要可倒掉。(3)将余下的鸡清汤500克入勺上火,并加进盐、味精、料酒调好味,撇去浮沫,盛入10个小汤碗中即成。

鲍鱼粥〔材料〕鲍鱼 1/2个、姜片 3片、葱 2支、鸡肉 4两、金针菇 2两、香菇 1朵、芹菜 2支、米 1/2杯、水 4杯、盐 1/4大匙、柴鱼味精 2小匙、白胡椒粉 2小匙、香油 2小匙
〔做法〕(1)将鲍鱼洗净,放入清水中浸泡约1天后(可置于冷藏),再加入材料(2)同煮,沸腾后改小火熬煮约2~3小时,待鲍鱼软化后即熄火再浸泡半天,最后取出鲍鱼切薄片备用。(3)材料洗净,鸡肉切片、金针菇切段、香菇切片、芹菜切末备用。(4)将米洗净加入4杯水,先以大火煮沸后改小火熬煮,此时加入鲍鱼片与鸡肉片续煮约30分钟,再加入金针菇、香菇、芹菜末与所有调味料拌匀煮熟即可。
鲍鱼沙拉
色拉口味:清淡爽口
原材料:新西兰蓝鲍鱼
制作流程:
1、用去皮橙子切片与白酱油、日本米酒、日本味啉、米酒醋及鲜姜做饰菜。
2、将鲍鱼每面烘烤10秒钟。
3、摆好其他的成分并用香料稍加点缀。
鲍鱼香菇鸡汤
材料:
1.碎鲍鱼片
2.老鸡半只(可请肉铺先去皮去油),或用竹竹丝也可(胶质很多)
3.香菇几朵
4.姜少许
5.盐少许
做法:
1.鲍鱼片洗净(不用泡)
2.香菇泡软
3.老鸡洗净氽烫一下
4.另再烧一锅水,待水滚后将材料全放入,待水开后再转小火煮3~4小时,鲍鱼片才会软且入味
5.上桌前再放盐即可。
鲍鱼干锅鸡
制作材料:
主料:小鸡一只斩块,鲜鲍鱼4-5只,香菇数朵泡软,红枣4-5粒,蒜8-10粒,姜三片。调味料:泡香菇水小半杯,老抽,生抽各一大匙,糖半大匙,香醋数滴,米酒一大匙。
做法:锅里两大匙油烧热,放入姜片,蒜粒爆香。加入鸡块,香菇,鲍鱼翻炒数下后放糖,酱油,水,上盖焖煮五分钟。开盖转大火烧至汤汁将近收干(不停翻炒),滴香醋,拌均熄火。将所有材料转入砂锅,上盖置小火上烧至热锅,将米酒从盖上淋下至香气溢出即可。
五彩炒鲍鱼
主料:净鲜鲍鱼250克
配料:红萝卜50克,鲜笋50克,青辣椒50克,韭黄50克,水发冬菇50克,蒜茸1克,姜丝1.5克。
调料:精盐5克,芡汤35克,绍酒10克,湿淀粉10克,净芫茜25克,芝麻油5克,花生油500克(约耗50克)。
制法:
(1)将鲍鱼、红萝卜、鲜笋、青辣椒、冬菇分别切成长6厘米,宽0.3厘米的丝状。将鲍鱼丝放入炒锅滚至熟,倒入漏勺滤去水;再将红萝卜丝、鲜笋丝放入炒锅,加精盐(6克)滚至熟,倒入漏勺滤去
(2)用旺火烧热炒锅,下油涮锅后,放入蒜茸、姜丝,烹绍酒,再放入鲍鱼丝、红萝卜丝、鲜笋丝、韭黄、辣椒丝、冬菇丝、用芡汤加湿淀粉调芡,加色尾油(15克),装盘,用芫苯茜伴边便成。
四味鲍鱼
原料
听装鲍鱼500克。粉皮250克、黄果或青笋75克。椒盐25克、豉味汁30克、芥末25克、芝麻酱30克(或姜汁25克、蒜泥25克、椒油15克)。
制法
听装鲍鱼取出,入锅煮至刚熟捞出,片成薄片。粉皮煮熟后修成大小相仿的片。黄果或青笋雕刻成任意的花型。先将粉皮铺在盘底,上铺鲍鱼片,周围用雕成花型的黄果或青笋点缀,配上椒麻、怪味、芥末、麻酱四种味碟即成。(近年来,此菜所配味碟又增加了红油味、姜汁味、蒜泥味、鱼香味四种。即所配味碟已随食客需求,可灵活调整)。
扒鲍鱼冬瓜球
主料:水发鲍鱼肉300克
辅料:冬瓜50克、火腿20克、水发冬菇30克、冬笋20克、青豆10克;花生油50克、葱姜、蒜各15克、清汤20克、湿淀粉30克、味精5克、鸡油25克;
制作:
1)将鲍鱼先用直刀法每0.2厘米宽剞一刀(深度为2/3)然后转换一个角度劈成大片;
2)冬瓜去皮切成1.5厘米见方的块,修成圆球形;
3)冬菇、冬笋、火腿均切象眼片;
4)炒锅加水,旺火烧沸放入冬肠煮熟,捞出控净水分;
5)炒锅内花生油、用中火烧至六成热(约1s0℃)时,放入葱姜蒜出香味、加入清汤(捞出葱、姜、蒜不用)、鲍鱼、冬菇、火腿、青豆、冬瓜球,烧沸后用湿淀粉勾芡,用微火扒透,放味精、淋上鸡油出锅即成
主料:小鲍鱼600克。
辅料:葱花、姜、蒜。
调料:酱、鲜汤、鸡精、盐、料酒、胡椒粉、糖、淀粉。
做法:
1.将小鲍鱼刷洗干净,放入沸水中略烫至两分熟,放入料酒除腥味,捞出沥干水分;
2.坐锅点火待油热,放入姜葱蒜,再加入酱炒香后,依次放入料酒、鸡精、盐、糖和胡椒粉,再加入高汤;九头鲍鱼
3.把鲍鱼放入汤内焖几分钟,待入味后盛出,在锅内剩余的少许汤汁内加入淀粉和葱花,淋在鲍鱼上即可食用。
滑熘鲍鱼球
配料:发好的鲍鱼250克,鲜蘑菇250克,鸡蛋清1个,花生油500克(实耗60克),葱花1克,姜末5克,蒜茸5克,料酒15克,盐5克,味精2克,香油5克,胡椒粉1克,淀粉5克,湿淀粉15克,鲜汤适量椒盐鲍鱼。
操作: 1、将发好的鲍鱼肉去皮,洗净,剞"十"字花刀,再改切成长方形块,放在碗内,加蛋清,淀粉抓匀上浆;鲜蘑洗净,切成小片,下开水锅中焯烫一下捞出,控干水;
2、在碗内放入鲜汤,盐,味精,胡椒粉,香油,湿淀粉调成芡汁;
3、将锅架在火上,放油烧至五成热时,将鲍鱼块下入,用铁筷划开,滑炸烧至八成熟,下入姜末,葱花,蒜茸炝锅,出香味后下入鲜蘑菇片翻炒几下,放入鱼块,烹入料酒,倒入调好的芡汁,烧开颠翻,翻裹匀后出锅即可。
鲍鱼肉片汤
配料:鲍鱼(罐头装)1只,猪肉(以腰里脊为佳) 2两,葱1支。
盐1小匙。
操作:
1.鲍鱼切片,猪肉洗净切片。
2.葱去老叶、头须,洗净切段。
3.把作法1之材料放进炖锅内,另挑葱白部分先加入。取3碗水兑鲍鱼罐头的汤汁,以武火烧开后,用文火慢炖约炖30分钟,加进葱青,加盐调味,续滚5分钟即可。
麻酱紫鲍青边鲍鱼
配料:水发鲍鱼250克。
麻酱25克。精盐、绍酒、味精、油、鸡汤。
操作: 1、把水发鲍鱼洗净,切成蓑衣形的花刀块。
2、勺内放入猪清油约30克、35克,把麻酱放入勺内煸炒片刻,再将鲍鱼放入勺内炒至麻酱起泡时,加精盐、绍酒、味精、鸡汤再炒片刻,用水淀粉勾少许芡出勺。
鲍鱼拌面鲍鱼拌面
[主料]:新西兰鲍鱼
[制作过程]:
1、在热锅中烘烤后取出鲍鱼。
2、浇上重力稀奶油,降低热度再放置在宽面上。
3、加上帕梅森干酪,大蒜、香葱及荷兰芹。
4、将鲍鱼切片并在宽面上用番茄和茴香来点缀。
