三、阿胶怎么煮简单做法
阿胶简单做法如下:
用料:阿胶块240g、黄酒500g、核桃仁200g、红枣200g、桂圆肉200g、黑芝麻100g、枸杞50g、冰糖100g。
步骤:
1、用的是这个块状的阿胶块。
2、将阿胶块用刀背敲碎成小块,用黄酒浸泡三天我用砂煲熬阿胶,所以直接泡在煲里。现在天气有些热,浸泡时放冰箱冷藏室里,为防止黄酒挥发,要盖上盖子。
3、准备材料:核桃仁是用新鲜核桃剥的,大的掰小些,在锅里炒香,也可以直接用买的核桃仁。红枣洗净晾干水,用剪刀剪成小块,同时把核去掉,红枣炒干点。阿胶礼盒
4、这是浸泡三天后的阿胶块,大部分都溶了,还有小部分沉淀在煲底桃花阿胶。
5、把砂煲放在煤气上开小火慢慢熬,小部分沉淀的阿胶受热很快溶了,这时加入冰糖,用木铲转圈熬煮,防止糊底。
6、小火熬煮大概要半个小时左右,越来越粘稠,人不要离开,木铲一直在煲内划圈搅动,这时也极易糊底。
7、注意时时观察木铲,提起木铲,阿胶液呈现一个三角形的状态,这就是“挂旗”状态,表示阿胶已经熬好了。火开成最小,把材料按顺序倒进煲内,先大的再小的,依次是核桃仁、桂圆肉、红枣、枸杞、黑芝麻。注意每倒进一样要搅匀再倒进下一样。速度要快,最后的要都搅匀。
8、把煲内食材倒进准备好的容器里上面再盖上一层保鲜膜,用干面杖或手将表面整理平整。速度要快,不然阿胶凝结就没法操作了。最后放冰箱里冷藏两个小时以上。
9、拿出,用锋利的刀子切成块状即成。
